There’s nothing like waking up to the smell of breakfast on a Sunday morning. Family breakfast on the weekends has always been one of my favorite meals. The words baked, blueberry and breakfast are all you need to say to get my attention. These Grain Free Blueberry Scones are a new favorite of mine and are a huge hit with my family. I thought there would be enough to freeze after we made the first batch, I was wrong. We devoured them!

Since going grain free and adapting more of a Paleo diet, I’ve definitely had some challenges finding items, especially baked items that I like. A lot of the packaged gluten free baked goods are missing something, generally it’s either the texture or the taste. The other main issue is that even if they don’t have the gluten or the grains, a lot of them are still loaded with added sugars and preservatives.

The best way to truly know what you’re eating is to make it yourself. I never thought I would be someone who baked. I’ve always loved cooking, but baking is a whole different enchilada (food puns!…you’re welcome). This baked blueberry scones recipe is easy to follow and ready in 20 minutes.

What makes these blueberry scones grain free?

These scones are made with almond meal/flour and some added coconut flour. These flours are perfect for people who want to cut grain out of recipes and still enjoy baked goods. What if I want to try these but I don’t have time for a lot of baking?

If you double or more the recipe, you can do all of your baking in one sitting and freeze the leftover scones for an easily enjoyable treat later.

We posted this original recipe from the Super Glue Mom blog last week on our twitter page. We stayed pretty true to the original because it’s amazing, and our mama always said, “If it ain’t broke, don’t fix it!”. We did, however, slightly adapt this recipe by adding more lemon zest than the original, which enhances the lemony goodness. The combination of the lemon and blueberry with the soft biscuit-like texture of the scone fresh out of the oven will literally make your dreams come true!

Grain Free Blueberry Scones

Ingredients (See Full Recipe Below)

  • 1¾ cups blanched almond flour, sifted
  • 3 tablespoons coconut flour, sifted
  • ¼ cup honey
  • 1 egg
  • ¼ cup almond milk (any milk will work), divided
  • 3 tablespoons coconut oil, melted (you could use butter as well)
  • 2 teaspoons lemon zest
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup blueberries

Grain Free Blueberry Scones

We combined the almond and coconut flours and sifted through a mesh strainer directly into the mixing bowl. This bowl attaches to our standing electric mixer, you could also use a hand mixer. If you do it all by hand, make sure your ingredients are mixed evenly.

After your flour is sifted, add your remaining ingredients: honey, egg, 3 tablespoons almond milk, coconut oil (butter), lemon zest, baking soda, and salt to the flours. Mix until a loose dough forms. Gently fold in blueberries.

Using your biscuit cutter as a shaper, fill it with ½-3/4 inch of dough. Press it down with your hands to form scone over lined baking sheet and lift cutter as you hold down dough to release.

This recipe is really easy and we had a lot of fun putting it together!

Brush scones with remaining 1 tablespoon almond milk. Bake for 18-20 minutes until golden brown. Allow them to cool down slightly prior to eating. We ended up baking closer to 21 minutes in our oven, but keep an eye on them after about 15 minutes of baking since ovens vary.

Grain Free Blueberry Scones (Paleo)

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients

  • 1¾ cups blanched almond flour, sifted

Instructions

  1. Preheat the oven to 350F
  2. Sift your almond and coconut flours directly into a stand mixer. Add honey, egg, 3 tablespoons almond milk, butter, lemon zest, baking soda, and salt to the flours. Mix until a loose dough forms.
  3. Carefully add your blueberries
  4. Using your biscuit cutter as a shaper, fill it with ½-3/4 inch of dough. Press it down with your hands to form scone over lined baking sheet and lift cutter as you hold down dough to release. Repeat with remaining dough.
  5. Brush scones with remaining 1 tablespoon almond milk.
  6. Bake for 18-20 minutes until golden brown. Allow them to cool down slightly prior to eating.
