Salad means healthy right? Not always. I was stunned when I read the ingredients and nutritional facts to one of my Chick-Fil-A favorites, the Carrot and Raisin Salad. It contains sugar, high fructose corn syrup, mayonnaise, and a preservative called calcium disodium EDTA. It surprised me because I have definitely enjoyed the carrot and raisin salad for years and considered it to be a healthy option, but since I started eating cleaner, real/whole foods, its something that I am going to have to cut out of my diet.
There is good news! One of the main reasons Alison and I formed Down Home Health is to combat this very issue and provide healthy and delicious alternatives to not so healthy recipes that we “just can’t live without”. I developed a Healthy Carrot and Raisin Salad as a Chick-Fil-A copycat version.
I came up with some ideas of my own such as using Greek yogurt instead of mayonnaise and honey instead of sugar. I congratulated myself on being so smart and innovative, and then I searched for similar recipes and found hundreds of versions of this same recipe…oops, guess not! It’s dawning on me as we really start to form more and more recipe ideas that most of them already exist! That’s what makes this so exciting though, we get the chance to be creative and take what’s already been done over and over and try to make it our own.
I adapted this recipe from one of the best versions I found by Super Glue Mom. She does a perfect job of explaining the same issues I have with the added ingredients in the Chick-Fil-A version that overshadow the some of the nutritional aspects. She also gives an excellent nutritional comparison.
- 16oz bag of carrots
- 1 cup of pineapple crushed
- 6oz plain Greek yogurt
- 2 Tablespoons pineapple juice
- 1 Tablespoon of honey
- 1/3 cup raisins
- Shred the carrots by hand or in a food processor
- In a bowl, mix carrots, raisins and pineapple chunks
- Add yogurt and pineapple juice, mix well
- Drizzle honey over the mix and stir while drizzling
- Chill in the refrigerator for 1 hour and serve
