Peach and Blueberry Baked Oatmeal

Oatmeal is something that I loved as a child and rediscovered a love for as an adult. It’s hearty and warm and “sticks to your ribs” as my Mama would say. There are so many different ways to dress this humble grain up and baked is one of my new favorites. It’s a versatile dish, making for a great breakfast or brunch item or even a healthy dessert option. It reheats nicely, but is still tasty when it’s cold. Best of all, it’s great with fresh or frozen fruit, so you can enjoy year round.

Baked Oatmeal Ingredients

Preheat oven to 375°F. Oil a (9-inch) pie pan with cooking spray; set aside.

In a large bowl, stir together berries, peaches, oats, pecans, baking powder, and salt.

In a medium bowl, whisk together milk, yogurt, syrup, vanilla, egg and yolk; stir into oat mixture. Transfer to prepared pan.

Bake until firm and golden brown on top, about 50 minutes.

Cut into slices and serve.

  • 1 cup blueberries (fresh or frozen)
  • 1 cup chopped peaches (fresh or frozen)
  • 2 cups rolled oats
  • 1/2 cup chopped pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup milk
  • 1/2 cup plain yogurt
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 egg plus 1 egg yolk

Instructions
